Apple Blue Cheese Salad


Vinagrette:
3/4 c olive oil
1/3 c apple cider vinegar
3 Tbsp sugar
1 clove garlic, pressed
1/2 tsp salt
1/8 tsp black pepper

Salad:
8 c baby lettuce blend
4 diced apples (cored, but unpeeled)
4 oz blue cheese, crumbled
1 c walnuts or pecans, toasted
1/2 c dried cranberries, optional

1. Prepare vinaigrette by blending all ingredients thoroughly. Set aside.
2. Just before serving, layer in a large platter: lettuce, apples, blue cheese, toasted pecans, and c cranberries.
3. Drizzle vinaigrette over salad and serve.
