White Bean-Chicken Chili

Ingredients:
- 1 tsp olive oil
- 1 cup chopped onion
- 2 tsp minced garlic
- 2 cans cannellini beans
- 3 c cooked, chopped chicken
- 1 can chicken broth
- 1 1/2 tsp taco seasoning
- 1/4 tsp salt
- 1 c shredded pepperjack cheese
Directions:
1. Heat oil in a dutch oven over medium-high heat. Add onion and garlic; saute 2 minutes.
2. Mash one can of beans in a small bowl with a fork. Add mashed beans, remaining can of beans, and next 4 ingredients to pan; bring to a boil. Reduce heat and simmer 15 minutes.
3. Add cheese; simmer 5 minutes, stirring constantly. Serve.
