Steak and Mushrooms
Total Time: 20 minutes
4 beef tenderloin steaks, cut 3/4 inch thick (about one pound total)
1 Tbsp olive oil
3 c sliced fresh mushrooms
1/4 c seasoned beef broth
1/4 c whipping cream
1. Sprinkle steaks lightly with salt and pepper. In a large skillet cook steaks in hot oil over medium-high heat for 7 to 9 minutes of to desired doneness, turning once. Transfer steaks to a platter; keep warm.
2. In the same skillet cook and stir mushrooms over medium-high heat for 4 to 5 minutes or until tender. Stir in broth and cream. Cook and stir over medium-high heat for 2 minutes. Season sauce to taste with additional salt and pepper. Spoon mushroom mixture over steaks to serve.

Delicious! I'm realizing as I continue to cook that I absolutely LOVE mushrooms and if some red meat is smothered in them, I'm more likely to eat that red meat. This is a great, easy recipe and was delish with the roasted sweet potatoes on the side.
